Blackberry Apple Scones
INGREDIENTS:
- 450 g self-raising flour
- 2 tsp baking powder
- Pinch of salt
- 170 g butter
- 2 eggs
- 85 g caster sugar
- 4 tbsp butter milk
- 115 g apple, skinned and finely diced
- 500 g double cream, whipped
- Bramble jam, to serve
- Blackberry, halved, to serve
METHOD:
1. Preheat the oven on Circulaire (fan function) at 180°C
2. Twice sift the salt and flour & baking powder into the stand mixer bowl
3. Rub in the butter, by using the beater attachment on setting 3
4. Mix until it looks like fine breadcrumbs
5. Add in the sugar, apples, eggs and buttermilk; mix it to soft dough
6. If it seems to dry add extra milk a little at a time, it should feel soft but not sticky
7. Remove the mix from the bowl and place onto a floured work surface
8. Using the palm of your hand shape until it reaches 3-4 cm in thickness
9. Cut into rounds with very small pastry cutter
10. Place on a greased baking tray and brush with milk
11. Bake for approximately 20 minutes on the Circulaire function, at 180°C until golden brown
12. Transfer the scones to an open cooling rack and allow to cool
13. Meanwhile, using the whisk attachment, on setting 10, whip the cream until it holds its shape
14. Be careful not to over whip. Serve with the bramble jam, whipped cream and fresh blackberries
15. Using a small amount of icing sugar, in a sieve, dust the tops of the scones
