Chocolate Lava Cakes
INGREDIENTS:
- 2 tsp Butter, softened
- 4 tsp Castor sugar
- 6 tbsp Butter
- 1 cup Chocolate chips
- 3 Eggs plus one yolk
- 1 cup Icing sugar plus extra to serve
- 6 tbsp All-purpose flour
- A pinch salt
- 4 Ramekin dishes
- Raspberries, fresh mint leaves, whipped cream or ice cream to serve
METHOD:
1. Grease the inside of each ramekin, add a teaspoonful of sugar to each dish
2. Cover with the palm of your hand, shake and tip out any remaining sugar. Set to one side
3. In a medium-size microwaveable dish, place the butter and chocolate chips
4. Microwave on a medium power for three minutes
5. Remove the dish and beat the mixture until smooth
6. In a large mixing bowl, beat the eggs, add the chocolate mixture and combine
7. Add the icing sugar, flour, salt and mix well
8. Place the Nutricook steam rack into the pot and add a cup of cold water
9. Fill each ramekin with the mixture, almost to the top, place two-at-time on the steam rack
10. Secure the lid and valve
11. Using the manual programme, set the timer to 8 minutes. When cooked, release the pressure
12. Remove the lid, using gloves take out the ramekins, allow to stand for 5 minutes
13. Place a small plate over the ramekin and invert so the lava cake slides out
14. Repeat this process, top the lava cakes with raspberries, icing sugar and mint sprigs
15. Serve with some whipped cream or ice cream
